Kick-In-The-Head; Mock Collared Brawn

Who doesn't love a Kick-in-the Head? Just kidding. It's the flavour that will knock you back.
Pig's Cheeks lovingly coated with Cayenne and Nutmeg, rolled, tied and then poached for 24hrs. "Sublime Spicy Pork Butter", said everyone who's ever eaten any. Shipped frozen to prevent it melting all over the postman.
500g-600g each (depending on the pig!)
Keep it frozen and slice as you like it, or defrost it all and feed a family of 6 - perfect for spicing up your breakfast, brunch, lunch or dinner.
Very tasty, lovely spicy flavour. My personal recommendation is to pop it in the freezer 20-30 minutes before you want to cook with this so it firms up, then finely slice and put into a cold pan. Heat that bad boy up to render the fat and then fry your bread. Add your favourite tomato sauce and you'll find you've made yourself the tastiest bacon sandwich in the world.
I can confirm that "sublime spicy pork butter" is an accurate description. I was initially worried that it wouldn't defrost well, but it still retained great texture and taste. It's suuuper buttery, because of the amount of fat, but I also loved the jelly-like consistency of the outer layer. So much character rolled into this one. I was told that it's great to add in like an eggs benedict, but I greedily ate my share simply with bread. I would say it's more salty than, say, the Houghton Loin, so you can pair it with strong cheeses, too.
I walked in on an off chance to the Spa Terminus shop and was offered a sample of kick in the head. It was so unbelievably delicious that I left with an unexpectedly large portion of cooked meat that I had no initial intention of shopping for! The flavours are rich, melt in the mouth and perfectly balanced. I have no idea how long this will keep, because it didn’t even make it to the fridge before we’d eaten it all
The kick in the head is absolutely delicious. They are very happy to let you try things and they are all very good... but the rolled pigs head is definitely the answer!
